Living Hope Lunch…Spinach in Creamy Mushroom Sauce

Yesterday I received an amazing pack of Living Hope veggies, including spinach, snap peas, fresh basil and a cucumber. They became today’s lunch…and it was all low carb!
I fried an onion and then added mushrooms…
In went the spinach (with a basil leaf or two!) with a dab of butter…
Once wilted, I added a slug of cream, tipped it into a serving dish and sprinkled grated cheese over it…
