Avocado & Bacon Salad

I saw this recipe in a magazine, but didn’t have all their suggested ingredients so I adapted it and it turned out pretty darn good!

I used 250g bacon, chopped and fried in butter until cooked. I turned the heat off and  added about a quarter of a cup of garlic wine vinegar as well as olive oil to the bacon. I didn’t measure – I just estimated. Then I added avocado pears which I had quartered….and let it marinate a bit

Blending avo and baconI sprinkled about a quarter of a cup of shredded coconut over the top with ground pepper….and that’s how I served it…

Complete with coconut and ground pepperIt was REALLY good and REALLY easy!
