Stuffed eggs

Thursday 29th January 2015 – Doesn’t look very appealing because the egg broke, but it was a fried egg on last night leftover dinner of hake and veggies with cheese sauce. It was pretty good!

Wednesday 28th January 2015 – Out for a friend’s birthday breakfast. Sorry this seems a bit blurred. I felt self conscious taking the photo! (Did someone look at me funny?!) Delish!

Breakfast

Tuesday 27th January 2015 – Flipped eggs, generous grated cheddar cheese, half an avo, a dollop of creme fraiche and a squeeze of lemon juice. I could have this EVERY SINGLE DAY!

Breakfast

Saturday 24th January 2015 – Didn’t feel like making eggs this morning, so it was just slices of cheddar cheese, buttered with creme fraiche, served with a few strawberries and garnished with courgette strips…

Breakfast

Friday 23rd January 2015 – Just whipped me up some scrambled eggs this morning…

Scrambled eggs

Thursday 22nd January 2015 – This was leftovers stir-fried. Then I whisked two eggs and a bit of cream in a bowl. Microwaved it for 1 minute. Whisked again and then sprinkled it with feta cheese. Microwaved for 30 seconds and  slid it onto the plate with the stir-fry (courgettes, cherry tomatoes, few mushrooms and a small piece of gammon sliced)..

Breakfast

Wednesday 21st January 2015 – Strawberries and creme fraiche with a sprig of mint. Very nice, but not satisfying enough. Hungry by 10am!

Friday 16th January 2015 – I have a busy day today. I probably won’t eat again until 4pm, so I needed a Bonanza Banting Breakfast… here we have 2 eggs, 2 pieces of bacon, half a tomato, a quarter of a wedge of feta cheese, half an avo and a healthy tablespoon of creme fraiche. The wedge of lemon is absolutely amazing with the creme and the avo. (To be honest, splashed liberally over the creme fraiche makes it taste like dessert!) Hope this sees me through.
